Xôi xéo:

Chances are you will encounter this dish in almost every outdoors market. There are even two restaurantsdedicated fully to this dish in the Old Quarters. Xoi xeo is sticky rice topped with ground de-hulled mung bean and fried onion. Sometimes it can be served with eggs or steamed chicken breast on request. The serving is really filling and it is good for any time of the day but most Vietnamese have it for breakfast or lunch.

Xoi Yen is a all time local favourite sitting just North of Sword Lake (Hoan Kiem lake) on Nguyen Huu Huan street. Ask anyone in the area and they all know what you are referring to. The price varies, without chicken, a bowl of Xoi xeo costs you about 50 cents. Have it with a glass of soy milk and you have more energy boost than a box of granola bars!

"Vietnam is the land of heat and noodles". That is what an American friend wrote to me in an email when he said he missed Vietnam. While in English, there may be only some words "noodles", "vermicelli" or "noodle soup", in Vietnamese, we have various names "Phở, Bún, Miến, Bánh đa, Bánh canh, Mỳ" to describe our noodles. The Vietnamese noodles have different colors (white, red, yellow), shape and thickness, depending on the types and regions. Each of the said noodles has one more word next to it, like beef, chicken or other material, or name of a location to emphasize their specialty. For example, Phở gà (noodle soup with chicken), Phở bò (noodle soup with beef), Bún bò Huế (Huế city's beef noodle soup), Mỳ Quảng (Quảng Nam province's noodles) etc.

Ho Chi Minh was born in the village of Kin Lien of Annem as Nguyen Sinh Cung. His father, a Confucian scholar, brought Ho Chi Minh up in the religion of Confucianism, also his father taught him how to be a rebel. Ho Chi Minh participated in tax revolts and other rebellious activities with his father when he was young. Those activities were against the French government that held control of Vietnam at the time. After he received a full education Ho Chi Minh worked a couple of jobs here and there. He was a teacher for sometime and then decided to take up a position as a Chef on a streamer that traveled from Saigon, Vietnam to Marseilles, France. Ho Chi Minh soon abandoned that job to do what made him the reason for the writing of this biography. What he did was lead the Vietnamese into a war to make them a free people. Ho Chi Minh started his journey by becoming a photograph retoucher. While in this occupation Ho Chi Minh advanced his knowledge in the political scene. He advanced his knowledge by one, joining the Socialist Party. Another thing that he tried to do in France was convince Woodrow Wilson, who was there to sign a treaty to end World War I, about the abuses Vietnam was receiving from the French government and influence him to make Vietnam a independent country. Woodrow Wilson was reluctant in listening to a socialist, communist, and a rebel. Ho Chi Minh shortly after this incident became one of the founders of the French Communist Party. His explanation of this was, "It was patriotism, not communism, that inspired me." Then he moved on to learn more about communism in Russia. In Russia Ho Chi Minh worked as a covert agent. On his travels Ho Chi Minh wandered around the world doing duties for the communist party. After his involvement with the communist Russia. Ho Chi Minh went to China and formed yet another organization to aid communism, called the Indo chinese Communist Party. The organization was devoted to make Vietnam an independent nation. During the Beginning on World War II Ho Chi Minh was arrested by British forces and imprisoned for his beliefs in communism. That was only one of the may times he was arrested. Years later, Ho Chi Minh was released. Ho Chi Minh made it to the Southern Chinese border to try and make contact with his old party. Once he succeeded in the communication. With the ICP he established the Viet Minh. Ho Chi Minh tried once more to persuade the American government to make Vietnam an independent nation. Once again Ho Chi Minh’s request was refused. He was forced to comply with his original treat which stated, "You can kill 10 of my men for every one I kill of yours, yet even at those odds, you will lose and I will win." Ho Chi Minh perfected guerilla warfare and trained his men in this deadly art. Then Ho Chi Minh wrote a declaration of independence and made himself president. Ho Chi Minh was met by the French that occupied South Vietnam and Ho Chi Minh attacked to win. Eventually, Ho Chi Minh reached a peace agreement with the French government. Ho Chi Minh received control of Vietnam. Ho Chi Minh succeeded in his life long goal of making Vietnam independent, but his plan soon blew up. When Ho Chi Minh recalled Viet Minh forces from South Vietnam who had been there to help train the military and protect, an organization spurred called Viet Cong. The South blamed this on the Viet Minh and said that they trained these rebellious parties. The problem was the Viet Cong wanted to liberate Vietnam not bring communism in. This spurred the Vietnam War. The North and South fought for what government type would be right. The United States supported the South and sent money and resources over to Vietnam to aid in the fight against the North. Ho Chi Minh died in 1969 about half way through the war against communism. Ho Chi Minh lived a life of excitement and adventure, but he missed one thing as he travel the world abroad that was encountering Jesus in a life changing way. Ho Chi Minh succeeded in making his country free, which was the biggest accomplishment of his life. He left this world a hero for the Vietnamese and will remain one of the greatest legends, because no one knows the exact facts of his living. His date of birth is recorded six different times in a span of nine years. Some of the books that are used by Vietnamese to tell about their hero are actually believed to be written by Ho Chi Minh himself. Today no one knows the details of Ho Chi Minh’s life, they only know the broad picture.

The Culture of Vietnam is one of the oldest of such in the Southeast Asia region. Although Vietnam lies geographically in Southeast Asia, long periods of Chinese domination and influence has resulted in the emergence of many East Asian characteristics in Vietnamese culture, and generally Vietnam is said to be part of the East Asian cultural sphere, known widely as Chinese cultural sphere.

Despite considerable foreign influence, Vietnamese people have managed to retain many distinct native customs which have always played a vital role in daily Vietnamese life throughout the millennia. While Chinese culture has the largest foreign influence on traditional Vietnamese culture, there is also a much smaller influence from the Cham and later Western cultures (most notably that of France, Russia and the United States).

In terms of prehistory, most Vietnamese historians consider the ancient Dong Son culture to be one of the defining aspects of early Vietnamese civilization.
The beauty of women dressed in ao dai always leaves a deep impression on foreign visitors to Vietnam. Girl students dressed in white long robes take to streets on the way to schools or back home, or gracefully sail on their bikes along streets. Female secretaries in delicate pastels greet you at an office door and older ladies in deep shades of purple, green or blue cut a striking pose at a restaurant dinner. The ao dai appears to flatter every figure.

Its body-hugging top flows over wide trousers that brush the floor. Splits in the gown extend well above waist height and make it comfortable and easy to move in. Although virtually the whole body is swathed in soft flowing fabric, these splits give the odd glimpse of a bare midriff, making the outfit very sensual.

Ao dai is made individually to fit each customer's shape to create the most graceful possible look. The pants should reach the soles of the feet and flow along the floor.

Comfortability is always taken into account for fashions and beauty. Tailoring must ensure the wearer's freedom of movements. Despite it is a long robe, ao dai must be cool to wear. Synthetic or silk fabrics are preferred as they do not crush and are quick drying, making the ao dai a practical uniform for daily wear.

The color is indicative of the wearer's age and status. Young girls wear pure white, fully-lined outfits symbolizing their purity. Older but unmarried girls move into soft pastel shades. Only married women wear ao dai in strong, rich colors, usually over white or black pants. However, ao dai is rarely seen in places where manual work is practiced. The nineties saw a real resurgence of ao dai. It has become standard and common attire for girl students as well as female staff at offices and hotels. Traditionally, ao dai has become the most preferred dress on formal occasions.
Early versions of the ao dai date back to 1744 when Lord Vu Vuong of the Nguyen Dynasty decreed both men and women should wear an ensemble of trousers and a gown that buttoned down the front. However, not until 1930 did ao dai appear partly similar to its look today. Vietnamese fashion designer-cum-tailor Cat Tuong, called as Monsieur Le Mur by the French at that time, lengthened the top so it reached the floor, fitted the bodice to the curves of the body, and moved the button line from the front to the left side of the body. Men wore it less, generally only on ceremonial occasions such as weddings or funerals. But it took another 20 years before the next major design change was incorporated and the modern ao dai emerged. During the 1950s two tailors in Saigon, Tran Kim of Thiet Lap shop and Dung of a tailoring shop of the same name, started producing ao dai with raglan sleeves. This creates a diagonal seam running from the collar to the underarm and this style is still preferred today.
Today, ao dai has been a bit modified. Its length is cut shorter usually just below the knee. Variations in the neck, between boat and mandarin style, are common and even adventurous alterations such as a low scooped neckline, puffed sleeves or off the shoulder designs are appearing as ladies experiment with fashion. Color patterns are no longer rigidly controlled and accesses to new fabrics have generated some dazzling results. However, most visitors to Vietnam have highly appreciated local tailors' skills when making ao dai. It is hard to think of a more elegant, demure and charming outfit, that suits Vietnamese women of different ages, than ao dai.
Holidays or other Important Days Vietnam celebrates many holidays, including traditional holidays which have been celebrated in Vietnam for thousands of years, along with modern holidays imported predominantly from western countries.
Among the traditional holidays, the two most important and widely celebrated are the Lunar new year (Tết), followed by the Mid-autumn lantern festival (Tết Trung Thu), although the latter has been losing ground in recent years.
